Chat Tea Cookies (raw)


1 cup dried coconut- divided
1 cup raw almonds- if time permits soak in water for 8 hours to activate enzymes
2 tbsp. tahini
5-6 tbsp. honey or agave
1 1/2 tsp. ground allspice
1 1⁄2 tsp. ground cardamom
2 tsp. ground cinnamon
1⁄2 tsp. salt

Place 1⁄2 cup coconut in food processor, grind until it is a crumbly meal. Set aside in a bowl. Place all remaining ingredients in the food processor; pulse until it forms a thick, sticky dough.
Roll the dough into tablespoon size balls, and then roll in the coconut meal. Refrigerate at least 1 hour before serving.
